MEXICAN LASAGNA

Makes 8 servings

1 lb. ground turkey-cooked and drained
1 15 oz can whole kernel corn-drained
1 pkg. (envelope)of taco seasoning
1 15 oz can tomato sauce
1 cup of Picante sauce
Salt & Pepper to tast
10 corn tortillas |
1 lb. fat-free cottage cheese
1 tsp. oregano
1 tsp. garlic salt
1/4 cups grated parmesan cheese
2 eggs, slightly beaten
8 oz. shredded cheddar cheese |
Directions
:
Mix first 5 ingredients. Simmer 5-10 minutes. Meanwhile, beat eggs & combine with cottage cheese, parmesan cheese, oregano, & salt.
Spray 13x9x2 baking pan with Weight Watcher Buttery Spray. Line pan with 5-6 tortillas, up sides and overlapping as necessary. Pour half of meat mixture over tortillas; spread evenly, then spoon all the cheese misture over the meat. Layer with rest of tortillas, then rest of meat.
Bake at 350 degrees F. for 25-30 minutes until bubbly. Sprinkle cheddar cheese over the top then heat until melted. Wait 10 minutes to serve. Each serving = 1/8 of pan
